Halloumi with corn
Introduction
The UFC is on TV. The fighters circle each other in a cage lined with ads for personal injury lawyers. It is 3:30 in the afternoon. I am at the hotel bar in the lobby of a Springhill Suites in a Texas strip mall.
Ingredients
- Halloumi
- Corn
- Cherry tomatoes
- Basil
- Red onion
- Jalapeno
- Cumin
- Limes
Instructions
-
Slice the halloumi into approximately 1 centimeter thick slices. Slice tomatoes in half. Remove corn from cob. Slice jalapeno and red onion very thin.
-
Heat a little olive oil in a pan. Once hot, fry the cheese on each side, then remove and let rest on paper-towel-lined plate.
-
Add a bit more oil and all veggies to the pan. Toss with salt, black pepper, and cumin. Cook until things start to soften.
-
Cube the sliced halloumi.
-
Remove the pan from heat. Add the halloumi, juice of a lime, and garnish with torn basil.
Inspired by Melissa Clark’s Halloumi with corn, cherry tomatoes, and basil.
