Halloumi with corn


Introduction

The UFC is on TV. The fighters circle each other in a cage lined with ads for personal injury lawyers. It is 3:30 in the afternoon. I am at the hotel bar in the lobby of a Springhill Suites in a Texas strip mall.

Ingredients

  • Halloumi
  • Corn
  • Cherry tomatoes
  • Basil
  • Red onion
  • Jalapeno
  • Cumin
  • Limes

Instructions

  1. Slice the halloumi into approximately 1 centimeter thick slices. Slice tomatoes in half. Remove corn from cob. Slice jalapeno and red onion very thin.

  2. Heat a little olive oil in a pan. Once hot, fry the cheese on each side, then remove and let rest on paper-towel-lined plate.

  3. Add a bit more oil and all veggies to the pan. Toss with salt, black pepper, and cumin. Cook until things start to soften.

  4. Cube the sliced halloumi.

  5. Remove the pan from heat. Add the halloumi, juice of a lime, and garnish with torn basil.
